Spicy Shakshuka

A spicy, comforting shakshuka made with my Tamarind, Garlic + Chilli Spice Paste for extra depth and heat.
Ingredients
- 1 tbsp olive oil
- ½ small onion, finely chopped
- ½ red pepper, sliced
- Sea salt
- 1 x 400g tin chopped tomatoes
- Pinch of sugar
- 2 eggs
- Salt and pepper
To serve
- Coriander leaves
- Feta
- Flatbread to dip
Directions
Heat the oil in a small frying pan. Add the onion, pepper and salt and cook for 5 minutes to soften.
Stir in the Tamarind, Garlic + Chilli Spice Paste and cook for 30 seconds, then add the tomatoes and a splash of water.
- Simmer for 8–10 minutes until thick and saucy, seasoning with salt, pepper and sugar if needed.
- Make a small well in the sauce, crack in the egg, cover and cook for 3–5 minutes until just set.
Top with feta, coriander and a good drizzle of Chilli Crunch, Serve with bread.
