Miso caramel pears with crumble topping

This is another recipe I wrote for Balance Garden. I had been going through a pear phase - roasting them in the pan with butter and maple syrup, then adding to my porridge for a rather sumptuous breakfast! - and thought they would be a perfect base for a dessert.
This miso caramel pan sauce is a cheat's version of a real caramel, but so easy and completely delicious. And for those of you who have never tried the miso version, you're missing out! It's very similar to the usual salted caramel, but with a subtle unami kick.I originally made the recipe dairy free but here I have given the option of butter and normal milk, if you prefer.You can read the original article here.

INGREDIENTS

For the crumble:
  • 60g plain flour
  • 30g oats
  • 1 tbsp brown sugar
  • 2 tbsp coconut oil solidified OR 2 tbsp butter
For the pears:
  • 2 ripe but firm pears halved
  • 2 tbsp maple syrup
  • 1 tbsp white miso paste
  • 60 ml milk
  • 1 tsp coconut oil OR 1 1 tsp butter

DIRECTIONS

  1. Preheat the oven to 190C/fan 170C/gas mark 5.
  2. First, make the crumble. Place the flour, oats and sugar in a bowl, and rub in the solidified coconut oil until combined, ensuring no big lumps remain.
  3. Sprinkle the mixture evenly onto a non-stick baking sheet (or one covered in foil) and place in the oven for 20-25 mins until golden brown.
  4. Next, prepare the caramel. Place the maple syrup and miso paste in a bowl and mix in the milk, making sure there are no lumps. Put aside.
  5. Now, remove the seeds from the pears using a teaspoon.
  6. Heat the coconut oil in a frying pan on a medium heat. Once hot, add the pears face down. Cook for about 5 mins, until brown on one side and starting to soften.
  7. Turn over, and cook for another 5 minutes or so until the whole pear feels soft and cooked.
  8. Next, add the caramel mixture over the pears and into the pan, making sure you swirl it around so the pears are covered. Heat on a low simmer for a few minutes until it starts bubbling and thickens to a syrupy consistency.
  9. Remove and serve immediately with the caramel drizzled over the pears, then topped with the crumble mixture. Perfect with ice-cream.
