2 spring onions, chopped 2 tomatoes, cut into chunks 2 tbsp water 2 eggs, whisked 1 tsp sugar 1 tsp light soy sauce Neutral oil to fry TO SERVE Spring onion, sliced Rice Heat 1 tbsp of oil in a frying pan or wok over a medium-high heat. Add the spring onion and fry for a minute or two. Add the tomatoes and stir-fry for a few minutes until softened, adding the water once the juices have dried up a little. Pour over the eggs. Add the sugar and soy. Let it set a little before gently scrambling. You want the egg to still be fairly soft. Serve immediately with rice and scattered with spring onions. Ingredients
