Need a quick, flavour-packed dinner? This Lemongrass & Ginger Noodle Stir-Fry comes together in under 10 minutes and is bursting with fresh, vibrant flavours. Perfect for a speedy midweek meal!

Ingredients
- 1 tbsp neutral oil (vegetable, sunflower, or coconut)
- 1 red onion, thinly sliced
- ½ red pepper & ½ orange pepper, sliced
- 100g broccoli, cut into small florets
- 1-2 tbsp Woolf’s Kitchen Lemongrass & Ginger Paste
- 2 portions fresh noodles (or dried, cooked as per packet instructions)
- Soy sauce, fish sauce, or salt, to taste
- Garnish: Sliced spring onions and/or fresh coriander
Instructions
- Heat the oil in a large pan or wok over medium-high heat. Add the red onion and fry for 1 minute.
- Toss in the peppers and broccoli. Stir-fry for 2-3 minutes until slightly softened.
- Add the Lemongrass & Ginger Paste, stirring well to coat the veggies. Cook for another minute.
- Add the cooked noodles and toss everything together. Taste and adjust seasoning with soy sauce, fish sauce, or salt.
- Serve hot, garnished with spring onions and fresh coriander.
