INGREDIENTS

  • 1 tbsp oil
  • 2 spring onions, sliced
  • 1 tomato, chopped
  • 2 eggs
  • A splash of soy sauce
  • 1 tbsp Lemongrass & Ginger Spice Paste
  • ½–1 tsp sugar
  • 1–2 slices sourdough or other bread, toasted
  • Chilli Crunch to serve

DIRECTIONS

  1. Whisk the eggs in a bowl with the soy sauce and Lemongrass & Ginger Spice Paste.
  2. Heat the oil in a frying pan over a medium heat. Add the spring onion and cook for 1 minute.
  3. Add the tomato and sugar, plus a small splash of water to help the tomatoes soften. Cook for about 2 minutes.
  4. Move the tomato mixture to one side of the pan and pour in the eggs. Scramble gently, then combine with the tomatoes.
  5. Spoon onto hot toast, drizzle with my Chilli Crunch and devour!
