Chinese tomato & egg stir-fry

A super-simple 5 ingredient dish with gorgeous savoury-sweet umami flavours. Perfect for a speedy lunch. If you're an egg fan then you have to make it!

INGREDIENTS

  • 2 spring onions, chopped
  • 2 tomatoes cut into chunks
  • 2 tbsp water
  • 2 egg whisked
  • 1 tsp sugar
  • 1 tsp light soy sauce
  • Neutral oil to fry
TO SERVE:
  • Spring onion, sliced
  • Rice

DIRECTIONS

Heat 1 tbsp of oil in a frying pan or wok over a medium-high heat. Add the spring onion and fry for a minute or two. Add the tomatoes and stir-fry for a few minutes until softened, adding the water once the juices have dried up a little. Pour over the eggs. Add the sugar and soy. Let it set a little before gently scrambling. You want the egg to still be fairly soft. Serve immediately with rice and scattered with spring onions.
