Easy cheddar shortbread bites

In cafés, my eye is often drawn to the shakshuka - a comforting, saucy brunch dish, predisposed to a good bread dipping (and for me, a perfect vehicle for lashings of Tabasco or my Jalapeño & Lime).
There are as many versions of shakshuka as there are condiments in my cupboard (well, almost) and the recipe here uses aubergines, which makes an ideal partner in crime for the rich tomato sauce.
But don’t just wait until your next brunch, it’s also makes for a healthy and substantial dinner as well.I originally wrote this recipe for Balance Garden.

INGREDIENTS

150g self-raising flour

75g cheddar cheese, grated

110g butter, cold and cubed

Large pinch sea salt

DIRECTIONS

  1. Mix together the flour, 50g of the cheese and the butter in a food processor until it forms a dough. Add 1-2 tbsp of milk if needed to bring it together.
  2. Roll out the dough on a floured surface to 1cm thickness. Cut out 5cm circles using a pastry cutter (or whatever you might have to hand - I used a shot glass sized baby cup!). Place on the baking tray and sprinkle with the remaining cheese and salt.
  3. Bake for 15 mins or until golden. Leave to cool on the tray then serve.
