Green sesame noodle salad

Nutty, creamy and herby, this noodle salad is packed with veg and so delicious - perfect for lunch!

Tahini is the hero here and forms the base of the dressing along with coriander, rice vinegar, honey and soy.

INGREDIENTS

For the dressing:
  • 60g coriander
  • 4 tbsp tahini
  • 2 tsp light soy sauce
  • 2 tbsp rice vinegar
  • 1 tsp honey
  • 1 clove of garlic
  • 1 tsp ginger, grated approx 2 cm piece
  • 1 tsp sesame oil
  • 50-75ml water
  • Pinch of salt to taste 
For the noodles:
  • 2 portions soba or ramen noodles
  • cooked according to packet instructions
  • drained and rinsed
  • 150g cucumber julienned
  • 2 spring onions sliced
  • 1 carrot julienned
  • 6 radished thinly sliced
  • 1 red pepper thinly sliced
  • Handful of salted peanuts
To serve:
  • Wedge of lime, Extra peanuts, Slices of chilli (optional)

DIRECTIONS

  1. Blitz together the ingredients for the dressing with a blender or hand blender.
  2. Taste and add any extra soy, salt, honey or rice vinegar to taste. If you prefer a thinner consistency then add a splash more water.
  3. Place the noodle ingredients in a bowl then pour over the sauce and combine.
  4. Top with the garnishes and eat immediately.
