Hoisin Chicken Wraps

All the delicious flavour of duck in pancakes, but in a speedy wrap.

INGREDIENTS

For the sauce:
  • 3 tbsp hoisin sauce
  • 2 tbsp light soy sauce
  • 1 tsp honey
  • 1 tsp dried chilli flakes
For the chicken:
  • 4 skinless, boneless chicken thighs, thinly sliced
  • 2 spring onions cut into 4cm pieces
  • 2 cloves of garlic, crushed
  • Neutral oil, to fry
To serve:
  • Wraps, Cucumber, cut into thin batons

DIRECTIONS

  1. Combine the ingredients for the sauce in a small bowl and set aside.
  2. Heat a drizzle of oil in a large frying pan over a high heat.  When hot add the chicken. Stir-fry for 3-4 minutes until browned then add the garlic.
  3. Cook for another minute or so then add the spring onion. Stir-fry for a further 2 minutes until the chicken is cooked.
  4. Pour in the sauce and coat well.
  5. To serve, divide the chicken into wraps and top with cucumber. Roll as you wish and enjoy!
