Hot Honey Halloumi & Mango Salad

INGREDIENTS

  • 1 block halloumi
  • Neutral oil, to fry
  • 1/2 a large fresh mango
  • 1 tsp Chilli Crunch
  • 2 tbsp runny honey
  • Squeeze of lime juice
  • 1/4 red onion, sliced
  • Red chilli, sliced
  • Coriander leaves

DIRECTIONS

  1. To make the hot honey, combine the honey and chilli oil.
  2. Tear the halloumi into bite-sized chunks.
  3. Heat a frying pan over a medium-high heat and add a drizzle of oil to the pan. When hot add the halloumi and fry until golden on all sides. Pour over the hot honey, combine and turn off the heat.
  4. To assemble, place the halloumi, mango and red onion on a serving plate with a squeeze of lime.
  5. Top with the coriander, red chill and a drizzle of Chilli Crunch.
  6. Add a squeeze of lime to any remaining hot honey in the bowl and drizzle over.
