INGREDIENTS

  • 1 tbsp neutral oil (vegetable, sunflower, or coconut)
  • 1 red onion, thinly sliced
  • ½ red pepper & ½ orange pepper, sliced
  • 100g broccoli, cut into small florets
  • 1-2 tbsp Woolf’s Kitchen Lemongrass & Ginger Paste
  • 2 portions fresh noodles (or dried, cooked as per packet instructions)
  • Soy sauce, fish sauce, or salt, to taste
  • Garnish: Sliced spring onions and/or fresh coriander

DIRECTIONS

  1. Heat the oil in a large pan or wok over medium-high heat. Add the red onion and fry for 1 minute.
  2. Toss in the peppers and broccoli. Stir-fry for 2-3 minutes until slightly softened.
  3. Add the Lemongrass & Ginger Paste, stirring well to coat the veggies. Cook for another minute.
  4. Add the cooked noodles and toss everything together. Taste and adjust seasoning with soy sauce, fish sauce, or salt.
  5. Serve hot, garnished with spring onions and fresh coriander.
