Satay Miso Dumpling Soup

If you love satay and you love dumplings, then you need to try this! It’s creamy, spicy, nutty and savoury thanks to my Storecupboard Hero miso which lends a lovely umami roundness to the dish.

INGREDIENTS

  • 2 spring onions, sliced
  • 1 Garlic, finely chopped
  • 2 tsp gochujang
  • 1 tsp miso paste
  • 1 tbsp peanut butter
  • 1 tsp soft brown sugar or more
  • 200ml coconut milk + 250ml chicken or veg stock
  • 1 tsp fish sauce or soy
  • 5-6 dumplings

DIRECTIONS

  1. Add some oil to a medium saucepan, then fry spring onions + garlic for a minute or so.
  2. Stir in the gochujang, miso, peanut butter and sugar
  3. Add the stock - a little at a time to combine it, then add the coconut milk and soy or fish sauce.
  4. Add the dumplings, place on a lid and simmer for around 5-6 minutes or until the dumplings are cooked.
  5. Taste and add any extra seasoning as desired.
  6. If you like it a little thinner than feel free to add a little more stock or water.
  7. Serve with spring onions and chilli oil
