Soy Ketchup Noodles

This might be the easiest noodle dish ever! Using my storecupboard favourites soy and ketchup, we have a super-quick, flavour-packed dish you'll want to make again and again. Perfect for a last-minute lunch or dinner!

INGREDIENTS

For the sauce:
  • 1.5 tbsp light soy sauce
  • 1 tbsp ketchup
  • 1 tbsp honey
For the stir-fry:
  • 1 tbsp neutral oil
  • 2 spring onion sliced
  • 1 clove garlic finely chopped
  • 1-2 tsp chill flakes (according to taste)
  • 1 portion of noodles or 1 packet of instant ramen noodles
  • cooked according to instructions
To serve:
  • Lime wedges Peanuts Coriander

DIRECTIONS

  1. Combine the ingredients for the sauce in a small bowl and set aside
  2. Heat 1 tbsp of oil in a large frying pan or wok over a high heat.
  3. Tip in your cooked noodles, then pour in the sauce. Combine well.
  4. Serve with a squeeze of lime juice, and sprinkled with peanuts and coriander.
