Soy marinated eggs

Soft-boiled, jammy eggs, in an umami-rich marinade of soy and mirin. Super-easy but a great way of adding flavour.

Perfect in a ramen but also delicious on toast!

INGREDIENTS

  • 4 large eggs
  • 100ml water
  • 100ml light soy sauce
  • 1 tbsp sugar
  • 2 tbsp mirin or rice vinegar
  • Chilli flakes, optional

DIRECTIONS

  1. Bring a pan of water to the boil over a medium heat.
  2. Add the eggs and cook for 6.5 minutes.
  3. Remove the eggs and plunge into ice water to stop the cooking process.
  4. Meanwhile make the marinade. Combine the remaining ingredients together, stirring until the sugar is dissolved.
  5. Peel the eggs and add them to the marinade, coating well. Place in a container and refrigerate for at least an hour, turning occasionally.
  6. Delicious served with ramen, but also on toast sprinkled with chilli flakes!
  7. Will last several days in the fridge in a sealed container (when whole).
