INGREDIENTS

  • 1 tbsp olive oil
  • 100g white beans (from a jar), drained
  • 80g cherry tomatoes, halved
  • 1 heaped tsp Woolf’s Kitchen Lemongrass & Ginger Spice Paste
  • 1 handful spinach
  • 1–2 slices sourdough or other bread, toasted
  • Salt, to taste
  • Woolf’s Kitchen Chilli Crunch, to drizzle

DIRECTIONS

  1. Heat the olive oil in a frying pan over a medium heat.
  2. Add the tomatoes and cook for a couple of minutes until beginning to soften.
  3. Add the beans and heat through.
  4. Stir in the Woolf’s Kitchen Lemongrass & Ginger Spice Paste, then add the spinach and allow it to wilt.
  5. Season with salt if needed.
  6. Spoon onto hot toast and finish with a generous drizzle of Chilli Crunch.
