Sweet & Spicy Prawns

INGREDIENTS

  • 2 tbsp sweet chilli sauce
  • 1 tbsp sriracha
  • 1/2 tbsp rice vinegar
  • 1 tsp fish sauce (or soy)
  • 1/2 an onion, sliced
  • 1/2 a red pepper, sliced
  • 75g broccoli, cut into small florets (I use tenderstem but any will do)
  • 100g king prawns
  • Neutral oil to fry
  • Serve with rice

DIRECTIONS

  • Combine the sweet chilli, sriracha, rice vinegar and fish sauce in a small bowl.
  • Heat 1 tbsp of oil in a large frying pan or wok over a high heat. Add the onion and peppers and stir-fry for a couple of minutes.
  • Add the broccoli and stir-fry for another couple of minutes.
  • Add the prawns and stir-fry until they start changing colour.
  • Pour in the sauce and combine well. Stir-fry until the prawns are cooked and the broccoli is tender crisp.
  • Serve immediately with rice.
